First Time I've Made Peruvian Ceviche!

It's around 3-4 AM in the morning here in Florida so I had the great idea of making some ceviche. What brought me to it? IDK, I just got bored. lol

This is the first time I've made ceviche alone, I used a Peruvian cookbook and saw some YouTube video as some references. Not to mention, I applied what my family does to the meal as well and it is surprisingly very decent. Normally, I would help prepare the ceviche when my family cooks or just observe. It just dawned on me to finally put myself to properly learn and attempt it alone.

I had all the essential ingredients:

  • white fish (in this case I used cheap 'ol tilapia)
  • salt/pepper
  • lime juice
  • fresh cilantro
  • aji amarillo

In addition to the main ingredients I also included a pinch of sugar and some ginger paste just to thicken the juice a little bit. I also minced the thinner parts of the tilapia to also thicken the meal.

There are still some additional ingredients that I would love to add but couldn't:

  • red onions
  • minced garlic
  • crustaceans (shrimp, maybe lobster)
  • calamari
  • and more goodness.

I will definitely try to make ceviche again when I can go all out, or when I'm bored again. The ceviche I made is a very basic ceviche but it tastes very decent.
