So, to move our Bts to the Beos chain is a two step process. First to the new Bts wallet, then from there to the Greymass Beos wallet. It doesn't work to send straight from an existing Bts address. Is this correct?

It's just trickier to send directly bypassing the BitShares wallet with the built in gateway. Not recommended.
I won't try that then. Is the process the same when we want to send our bts back in the future? Just reversed?
Pretty much simpler, you can send them straight back to your original BTS account.
