What could cause such a difference in trees between left and right?

different trees? and lack of sun. Or in the worst scenario a kind of bug.
I guess you are right, due to the fact that in the photo the sun at noon shines first on the greener trees, which results in shadows on the leafless at low sun positions Like common in autumn and winter ;)
That cause the tree to the left looks parched because of reduced water absorption from the roots of trees that are already old so it could be lack of nutrients, this makes the impact of the environment full of pollution as well.
overall I really like your photos, very interesting and very sharp photos, from far away as if the life of the drawing.

The soil texture on each part is contradicting.ie different texture.
Cool and unusual photo! I would guess the trees are different varietals and were planted at different times of the year, causing the leafing out to happen a few days apart.

The trees on the right are probably getting extra water from street-cleaning vehicles, while those on the left don't.

My guess is that they are different types of trees.
Indeed a remarkable and very strange one. Nature at its best I will say and its all the way !! Great shot and great eye to catch the contrast. Was it man made? It does look like there are other trees in the background that looks without leaves too.
