I really enjoyed reading your post. I did the Sapir-Whorf stuff in linguistics many moons ago. My current work (Ph.D.) is in philosophy, so not world building or creative writing. But this struck a cord with me as many of the authors I read state pretty much the same but in a philosophical context. I am from South Africa and the dominant languages here are (i) Germanic of nature (English, Afrikaans) and (ii) Bantu of nature (isiXhosa; isiZulu). The two language cultures have very different ways of expressing concepts and so on.
