He visto varios programas de cocina y me llama la atención que el 90% de los encargados de preparar comidas o postres nunca usan delantales ni se cubren la cabeza para evitar que cabellos caigan sobre los alimentos que se preparan, incluso se ven muchos cocineros con barba, cabello largo y con uñas largas.
La higiene en cualquier profesión es básica, pero en la cocina se convierte en algo indispensable, entonces que ha pasado que ahora los cocineros manipulan alimentos sin tomar en cuenta los implementos que a lo largo de la historia han caracterizado a esta profesión como es el gorro, guantes, delantal y uniforme.
El que trabaja como cocinero debe conocer la importancia que tiene tanto la chaqueta de cocinero, delantal y el gorro. En caso de no contar con alguno de estos elementos, estamos poniendo en riesgo la imagen de nuestra empresa de comida, la seguridad del equipo de cocina y, sobre todo, la salud de nuestros comensales.
Es importante que las personas que preparan alimentos cumplan como mínimo lo siguiente:
- Lavarse las manos, con jabón abundante, antes y después de manipular los alimentos, después de limpiar las herramientas o superficies de trabajo y después haber tosido o acudido al baño.
- Cuidar la manicura manteniendo las uñas cortas y arregladas para evitar que la suciedad se acumule bajo ellas.
- Usar joyas o cualquier pieza que pueda desprenderse durante nuestro trabajo sobre los alimentos.
- La vestimenta y el calzado deben ser los apropiados y estar limpios.
- La cabeza siempre debe ir cubierta.
- En caso de tener barba y bigote los mismos deben estar arreglados y lo más rebajados posibles.
