Stuffed Zucchini Boats!

The most delicious veggie you'll ever eat!

Ingredients:

3 Zucchinis
1 lb Lean Beef
Organic Marinara Sauce
Panko Breadcrumbs
Parmesan Cheese
Low-fat Mozzarella Cheese
Pepperoni
Garlic Salt
Onion Powder
Goya Adobo

You will also need aluminum foil and two 13x9" baking dishes.

Preheat the oven to 375 degrees. Begin with cutting each zucchini in half lengthwise and trimming the ends. Scoop out the flesh of the zucchini with a spoon. I found it easier to cut slits in them to make it easier to remove the flesh. Place the flesh in a bowl on the side. It will be used later on. Fill one baking dish with 1 inch of water and place the zucchini inside. Cover the dish with foil and bake for 20 minutes or until tender. Chop the remaining zucchini flesh into small chunks.

While the zucchini is baking, get started on the filling. Place lean beef, turkey or sausage in a pan and let it simmer on medium heat. Add onion powder, adobo, and garlic salt to season the meat. Add the chopped zucchini flesh to the pan. Additional veggies can be added according to your preference. Stir the meat and veggies until they are cooked thoroughly. Remove the veggie and meat mixture from the stove and drain it in a strainer to remove excess grease. Place the mixture back into the pan and stir in 1 cup of marinara sauce. Simmer on low heat for about 10 minutes. By this time the zucchini should be done baking.

Remove the zucchini from the oven and briefly let it rest. Use the remaining marinara sauce and place it on the bottom of the empty 13 x 9" dish. Use tongs and transfer the baked zucchini onto the marinara sauce in the new baking dish. Scoop the veggie and meat mixture into the zucchini boats. Sprinkle mozzarella cheese on top along with pepperoni. Cover with foil and place the dish in the oven at 375 degrees for another 20 minutes. Once the time is up, remove the dish from the oven and sprinkle panko bread crumbs and parmesan cheese on top. Place the dish back into the oven for 5 minutes. Boom, bang, done! Let your dish cool and enjoy!!
