I love sauerkraut too. Let me know how it turns out with parsnips. Guatemalan has red onion and carrots as well. One thing I have found is I don't like fermented carrots on their own. I think the sugar content in the carrots makes for a weird taste. OK when mixed with other veggies like kimchi though. Fermented snow peas are really good.
