How does one decide what coffee is better than others...have a scoop of ice cream.

Today I am going to comment on coffee and the level of snobbery that can be associated or lack of interest some have in a good cup o joe. Asking someone if they want a coffee is not unlike asking someone if they want some ice cream..What flavour? Decisions decisions!!!branch of beans.JPG
Proper enthusiasts talk about acidity, flavour, roast, size of beans etcetc. My favourite conclusion is it comes down to preference.
Recently I went to Colombia, Narino Colombia in particular. High in the Andes, farms that are tended by modest kind indigenous fair trade organic people and end products. The coffee is grown to a quality ripeness, handpicked and sun dried. The coffee is sorted, cured and bagged. Roasted and Bagged. Then ground and brewed.
Now brewing is another High society interpretation!! No cowboy coffee anymore....WOW. What an episode. Perked? Aeropress, French Press, drip, expresso, steeped? OMG.
I learned that beauty is in the eye of the beholder and there is many a slip between the cup and the lip. Enjoy it however you want. But keep in mind the coffee that is grown with a high quality 100% arabica bean (seed) to begin with is a good start, follow that up with high elevation, sun coverage, volcanic soil, a lot of natural moisture and picked with love is always a good start..
I have also learned that cream and sugar are only necessary as a way to modify after you first try it. A good cup of coffee is in my interpretation not roasted past medium and should never taste burnt. Smooth and low acidity is the way to the bottom of this bowl of ice cream.
