What I would add is that from anatomical point of view our brains are built the same way. There is no difference between male and female brain. The difference you are talking about has a lot to do with our development as children and later in life.
As a woman you are brought up to see the world through a "male gaze". As you said, historically most scientists were men (white men to be precise). Same goes for philosophers and psychoanalysts as well. They were all men who studied women as test subjects, writing their own speculations to form theories that were later peer reviewed and published by other men. I always wondered why it never occurred to them to ask women direct questions. Like we were somehow incapable to speak for ourselves.
Freud famously identified female sexuality in terms of "penis envy" as though female body on its own had no purpose. Female psyche was studied on examples of Victorian housewives, who were not allowed to read or study. Actually, if a woman expressed her desire for studying that in itself was diagnosed as a sign of hysteria!
It terrifies me to think that human beings could be treated like this by other humans, often their own husbands. On top of that women were at the time still treated as a piece of property and husbands had power to disown them from all their belongings. On husband's request women diagnosed with hysteria could be locked up in mental asylums and spend rest of their lives there.
Developing intuition was a good survival technique. Same thing goes for sensitivity. Your life could depend on your ability to sense you husband's mood swings and respond in time to avoid punishment.
On the downside that's also how women learned to manipulate.
