Cajun Man Shares His Jambalaya Recipe

One of my favorite things to make is a jambalaya. It is a southern food made with pork and sausage. I often use chicken and sausage as well but you can follow the directions for both. This recipe will feel 6-8 people

2- onions
2-3 pounds of cut up pork
1- pound of smoke sausage
6- cups of water
3- cups of long grain rice

Start by adding a little cooking oil in a pot. Have cooktop in high. Add pork. Fry it until it gets very dark. Normally 15 mins. Add onions. Cook another 10 mins or until lucent. Add sausage and cook another 10 mins while stirring often. Add the water. Taste it at this time and add some salt and black pepper. Start with 2 tablespoons of salt and one tablespoon of pepper. However this is key. The water must taste very salty. Rice absorbs salt. After cooking this a couple of times, you will learn what suits your tastebuds. Once water is boiling, add the rice. Keep the heat high. Stay and stir it. Keep stirring. As the water evaporates, the rice will start popping like popcorn. It will also want to start sticking. When you can no longer keep it from sticking, cut heat to simmer and put the lid on. Cook on low for 20 mins. After 20 mins has passed, remove the lid and flip the rice by spooning down the side and without scrapping the bottom, turn it over. Do this around the pot and when finished, replace the lid and cook low for another 10 mins. After that bon appetite !! Enjoy!!
