I thought that Bitcoin supply can't be increased , but it's already doubled with BCH, and it is possible we are heading towards another fork. How is it not money creation out of thin air ?

They are separate currencies, and their prices will perform accordingly. Nothing on this earth is ever static. We're just led to believe that's the case.
