Ingredient:
- Green pepper
- Pig ears
- Carrot
- Chilli
- Garlic
- Fish sauce
- Dry onion
- Gongcai
- Tomatoes

1. Prepare pig ears
Remove any remaining hair from pig ears with a razor, boil pork ears until pork ears are soft, about 20 minutes. The longer you cook, the more tender the ears will become. Transfer the pig ears out, set aside to cool down.Should soak pig ears in ice water to make pig ears crispy and whiter. Cut into small strips along the gristle.

2. How to make pig ear salad
For the sauce: Add the juice of a lemon, fish sauce, sugar, and boiled water to a bowl. Stir them well to melt the sugar.
Soak gongcai in water until they expand, cut into 5cm lengths. Soak carrots and gongcai in salt again. Peel the carrots and cut them into pieces like mine.Mix fish sauce, green pepper, pork ears, carrots, gongcai Add all of them to a mixing plastic bottle. Serve at room temperature or chilled.
