No Bake Tiramisu
2 ½ cup strong Coffee (cooled)
1 Tablespoon Rum Extract
1 cup Heavy Whipping Cream
1 (8oz) container Mascarpone Cheese (room temp)
½ Cup Sugar
1 teaspoon Vanilla Extract
Unsweetened Cocoa Powder
2 packs of Ladyfingers Savoiardi
In a small bowl, mix coffee with rum extract.
Whip the whipping cream in a large bowl until stiff peaks. Set aside.
In another large bowl mix mascarpone, sugar and vanilla until smooth, then slowly add in add whipped cream until combined.
Lightly dip ladyfingers in coffee mix and line the bottom of an 8x11 baking dish. Spread cream mixture over the cookies. Repeat with ladyfingers dipped in coffee, spread cream mix on top. Dust With cocoa powder. Chill overnight. Enjoy!
