Lasagna Like Mama used to Make - Vlog Recipe

This vlog was filmed last week when I finally picked up a new stove with a working oven. For the last 3 months I have been using a stove with no oven and have really missed cooking, making bread and generally creating healthy dishes. Cooking is a passion of mine, so I found it really frustrating trying to eat well with only a microwave and grill.

One of my favorite styles of food is Italian. Pizza, pasta, risotto and of course... lasagna. I've been a life long vegetarian and have learned a few vegi dishes that even the most dedicated carnivore wouldn't turn their nose up at, this lasagna is one of them. This recipe also has the advantage that it is low FODMAP which means it is suitable for people who suffer from IBS as long as they don't have a wheat sensitivity. Lowe FODMAP basically means that it has very small amounts of short chain carbohydrates and sugar alcohols that are poorly absorbed by the body. Great for people with sensitive digestive systems.

So, this is my super reasonably healthy, vegetable lasagna recipe. I hope you enjoy, watching the video explanation and making/eating it.

Spinach & Veg Lasagna

Ingredients:

  • Half a pack of fresh spinach
  • 2 carrots (diced)
  • 2 small potatoes (diced)
  • 2 tins of chopped tomatoes
  • Half a cup of frozen peas
  • 3 spring onions
  • 2 table spoons of garlic infused olive oil
  • a pack of dried lasagna sheets
  • a few drops of high quality balsamic vinegar
  • A cup full of medium strength cheddar or other cheese

For the Bechamel sauce:

  • 50 grams of butter
  • 50 grams of flour
  • approx 1 cup of milk

Method:

  1. Dice potatoes and carrots and fry in garlic infused olive oil in a large sauce pan for 8-10 minutes on a low heat

  2. Add chopped spring onions and fry for a further 2 minutes

  3. Add chopped spinach and wilt down for 30 seconds to a minute

  4. Add liquidised chopped tomatoes, frozen peas and a few drops of balsamic vinegar

  5. Add a tea spoon of dried basil or a small amount of chopped fresh basil

  6. Simmer over a low heat for 15 minutes, stirring occasionally

  7. To make Bechamel sauce melt butter in small sauce pan

  8. Add flour and stir cooking for 30-40 seconds

  9. Add milk incrementally while stirring constantly until thick and creamy

  10. Build the layers of tomato sauce between lasagna sheets, covering the top sheet with the Bechamel sauce

  11. Grate cheese over the top and put in the oven to bake at gas mark 6 for approx 35 minutes, N.B. it might take more time depending on the oven

A couple years ago, our oven died and we did without as well. Good thing it was the summer so that we could bbq but I missed all of the baked dishes.

That is a great looking recipe and you have explained it really well. Might just make it and post on the results.

It's worth mentioning that 35 minutes at gas mark 6 is just an approximation, often it takes more like 40 - 45 mins 😉 basically, just keep an eye on it after 35 minutes have passed and take it when bubbling and slightly crisp and brownish.

Yes, I made this lovely meal and recorded the footage last week before I slipped my Disc but I know I'll be back to making lasagna again soon, maybe in 2 or 3 weeks when I've recovered.

It was a relief when a friend gave me there spare oven and I could cook proper food again. I was getting fed up of noodles from the microwave 😂😉

I love a bit of halloumi and also hummus form the Greek menu. Died vine leaves as well are real good. I'm a bit limited often with Greek food though as it's quite messy heavy 😉

I am noticing that my attention span isn't long enough for editting to the max in it....so that means even more kudos for you when I see what you are doing!

Yes, it does take a bit of time for sure. This one took me about 6 hours including, cutting footage down to 6mins, transitions, adding music, the uploading time and making the thumbnail in GIMP (free open source version of Photoshop). It is a labor of love and I only make videos occasionally given how sporadically dtube seem to vote on my vlogs. I'm very happy with this one though, both because I felt the quality was high, so I was satisfied when I watched it back after posting, video editing well done etc and also I got lucky that ocd noticed it 🙂

Ha ha, it definitely took a lot less time but making the lasagna than it did the how-to video. I like watching the good channel though so I thought I'd give it a crack waxing philosophical about how to cook something 😂🤣

I was broke at the time so I used to cook up these elaborate meals for her and present them like in a restaurant and she really appreciated it.

Yeah, the intro... I've been experimenting with Adobe after effects to get that animated intro and outro style that I see on a lot of Dtube/YouTube videos. I think it's helped take my vids up to the next level. I've still got a lot to learn in regards to editing and transitions but I feel like I'm progressing pretty well 🙂

The thing I'm happiest about is that I'm getting more confident speaking in front of camera.

I used to ermmm speak like ermmm I didn't know what to ermmm say ermmm 😉

ha ha, lots of ermmms, but I edited out the few that were in my explanation this time and it seemed more fluid.
