Let's Make Kinilaw and Caldereta

I was sleeping last night with a full tummy when I cooked Kinilaw and Caldereta. There was no specific occasion, but I was craving for these foods. How can I diet if I am the one assigned in the kitchen? 😁 Below are the recipes of my home made viands. But before I start, I just like to share a trivia about Kinilaw and Caldereta. Kinilaw is a Pinoy food, mostly well-known in Mindanao that is made by vinegar and raw tuna. Caldereta is a traditional specialty of stewed goat meat, but these days, many people use pork and chicken because goat meat is rare. The Caldereta word is taken from the Tagalog and Bisayan dialect Kambing and Kanding.

How to Make Kinilaw

Ingredients:
🔹fresh tuna
🔹vinegar
🔹cucumber
🔹onion
🔹ginger
🔹salt & pepper to taste
🔹lemon
🔹wild lime
🔹 chilli (optional if you crave a spicy dish)

Procedure:

  1. Wash the fresh tuna.
  2. In a bowl; mix the ingredients of vinegar, cucumber, sliced onion and ginger, lemon, wild lime, salt and pepper.
  3. Add fresh tuna and stir well.
  4. Serve.

How to Make a Pork Caldereta

Ingredients:
🔹pork
🔹potato
🔹carrots
🔹red bell pepper
🔹tomato sauce
🔹onion
🔹bay leaves
🔹soy sauce
🔹fish sauce
🔹black pepper
🔹green peas
🔹cooking oil
🔹liver spread

Procedure:

  1. In a heated pan, add the cooking oil.
  2. Cook the garlic, onion until fragrant.
  3. Add the meat until it reaches the golden brown color.
  4. Spread ground and black pepper.
  5. Season with fish sauce and bay leaves.
    6.Pour down the green peas and liver spread.
  6. Add tomato sauce.
  7. Add half a cup of water.
  8. Cover to simmer.Tenderize for 30 minutes.
  9. Add the carrots and potatoes.
  10. Combine the chilli, bell pepper. Simmer for 3 minutes.
  11. Serve wit hot rice.
