Hello my Dearest Foodies,
Summer is here and so are cravings for crunchy and fresh salads. I don't know about you, but I eat them way more than during the winter time and I am also more creative while making them.
At this time I decided to add some figs for change, but you can try other fruits as well. Not to forget the tasty cashew cheese that is so easy to make. Last year I made SUMMER GREEK SALAD with ALMOND FETA, so you may also check that one if you like. They are both delicious and highly satisfying with some roasted potatoes or a slice of whole grain sourdough bread.

That looks absolutely splendid i am a salad freak myself in summer times but i have never tried figs in a salad i must do next time :)

A very delicious looking salad. There are so many variations of salad, one should never get bored with them. I have not seem Cashew Cheese before but I'm sure I would love it. Another great Lena special! (U & R )
