Turkish Salads

This dish I cooked with my parents for last dinner. I want to share this receipts with you!

1 to 6 is self made, 7 and 8 is bought. Here is the list:

  1. Spiced lamb meat balls
  2. Bean salad
  3. Cacik / Cucumber salad
  4. Tomato and Cucumber Salad
  5. “Mother-in-Law”-Dip Feta dip, spicy
  6. Tsatziki, famous dip with garlic and yogurt
  7. Taramas, Greece Mayonnaise Dip with fish roe
  8. Pita bread

Spiced lamb meat balls

1 egg, lightly beaten
2 cloves garlic
1 tablespoon lemon zest
1 tablespoon Ras El Hanout,
1/4 cup chopped fresh mint
1-1/2 pounds ground lean lamb
1/2 cup fresh bread crumbs
salt and pepper

In a large bowl combine the eggs, garlic, lemon zest, the spices and the mint. Using a fork to mix in the lamb and the bread crumbs until well combined. With a tablespoon form mixture into balls.
Before frying all balls in a pan with oil, I would recommend to test a ball and taste it, if you want to add more spice or not. Enjoy!

bean salad
3 cups white beans canned
one red onion, chopped
¼ cup parsley
2 tablespoons lemon juice
5 tablespoons olive oil
2 teaspoons of sweet paprika
salt, pepper and sugar

Wash the beans. Cut the onion into rings. Wash the parsley and cut it. Mix Lemon juice, oil and paprika. Add beans, parsley and the onion rings. Spice it with salt, pepper and sugar. Enjoy!

Cacik
half cucumber
salt
2 garlic claws
2 ½ cup yogurt
2 spoons lemon juice
2 spoons olive oil
¼ cup dill
white pepper

Peel and halve cucumber, cut the seeds and slice it thin. Add ½ teaspoon salt and put it in a sieve and wait some minutes.
Mix freshly pressed garlic, yogurt, lemon juice and olive oil.
Squeeze the cucumber and add it with the dill and white pepper and mix it. Enjoy!

cucumber tomatoes salad
4 Tomatoes
1 cucumber
coriander
half red onion
2 tablespoons vinegar
salt pepper
4 tablespoons olive oil

Wash and cut the tomatoes and the cucumber in small chunks. Cut the onion in rings. Mix Vinegar, oil vegetable and coriander. Add salt and pepper. Enjoy!

“Mother-in-Law”-Dip Feta dip
½ cup feta cheese
½ cup cream cheese
1 red and green chili pepper
1 garlic claw
5 small tomatoes

Garlic, feta, cream cheese and chili pepper cut in small chunks and puree. Add tomatoes till the dip is creamy. Enjoy!

Tsatziki

2 garlic claws
1 cup yogurt
¼ cucumber
1 tablespoon lemon juice
¼ cup mint, chopped
salt white pepper

Press the garlic. Peel the cucumber, cut the seeds and cut in small chunks. Mix all ingredients and salt and pepper to taste. Enjoy.

That's my first time translating a reciepe. I hope you can follow it.
