Easy Watermelon Infused Vinegar Recipe!

I don’t know what I’ve done to deserve such great kids. These past weeks I’ve been feeling so spoiled! My daughter @anyavp treated me to a day of beauty and my son gifted me these great books to add to my cookbook collection! They are definitely a go to now in my kitchen!
I finally decided to go back to the thrift stores and I was glad I did because I came across these two beautiful pieces of mid century kitchenware!

I was super excited for these finds!
I also found a tiny lone leftover watermelon in my garden. Upon cutting it up I noticed it was a bit “punky” but sweet and fragrant none the less. I couldn’t let it go to waste so I decided to make infused vinegar with it!

I cut up my watermelon and put it in a clean mason jar topping it off with 3% strength white vinegar and a tablespoon thyme salt.
I like to season my salt with different herbs. Coarse sea salt with a few sprigs of thyme (Left in salt a couple of weeks till dry) gently add a nice flavor to any dish you use this salt on.
And honestly this is all there is to it! Close up your jar and let it sit in the fridge or pantry for a week. Strain and use the vinegar in any summer vinaigrette recipe you prefer or a few tablespoon in your bbq sauce or marinade!

You can do this with and fruit you don’t want to go to waste! Over ripe peaches and strawberries are a favorite to infuse in my home too!

I like the idea of using watermelon as not just a sweet fruit, but also as a salad ingredient and to infuse vinegars. Nice idea. The thrift shop finds?? Nice!! Scored.

Thank you! Nothing goes to waste really at my home, specially nowadays. And thrift stores are the best!
