Protein Banana Bread Recipe

Hey Steemians!

I'm an avid health nut and spend most of my free time (when not on Steem) at the gym and creating healthy recipes for some of my favorite foods! All guilt free! Here is one that I came across and modified to fit my own tastes!

Protein Banana Bread

Dry: (In one bowl)

  • 90g Rolled Oats (1.25 cups) turned into oat flour
  • 90g Protein Powder (your choosing. vanilla works great)
  • 1/2 cup Sweetener (use the zero calorie stevia extract!)
  • 2oz Nuts (your choosing)
  • 3 Teaspoons of Ground Cinnamon
  • 1 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 4 large Tablespoons of PB2 (Either peanut butter or chocolate flavors!)

Wet: (In Another Bowl)

  • 3 Teaspoons of Pure Vanilla Extract
  • 2 Large Eggs (Egg whites work too but doesn't bond as well)j
  • 4 ounces Unsweetened Apple Sauce (replaced the oil!)
  • 3 Medium sized ripe bananas (helps if theyre browning)
  • 1/4 Cup Unsweetened Vanilla Almost/Cashew Milk
  • Drizzle of SUGAR free syrup

Directions:

You'll want to mix all the dry ingredients in one bowl and all the wet ingredients in another bowl. You can use a mixer to help speed up the process, but just make sure that all the ingredients are well blended and the bananas don't leave any lumps. Slowly stirring the wet ingredients, pour the dry ingredients in little by little. Spray a 9'' bread dish with some non-stick spray and then bake at 350 degrees for 35-40 minutes

TIP: I like to save a little bit of the mixture to use as icing to top it once it is done. Let it cool for about 15 minutes before adding any sort of topping. You can also use sugar free whipping cream, fruits, peanut butter, nutella, or just about anything. If you want to keep calories low, I suggest either saving some of the batter, or using sugar free syrup, PB2, and a little bit of sugar free chocolate sauce. Makes for a delish topping!

For the whole dish, you're looking at around 1200 calories total
