African Plain Jollof Rice and Fried Chicken....

African dishes are known for their trademark taste of hot and spicy.

To start with, I will post the recipe for the famous african jollof rice.

This is largely eaten by people in the western part of Africa.

We have the plain jollof rice and the mixed vegetables jollof rice.

It can be served with fried or grilled-chicken, meat or fish. I also enjoy it with stewed pepper snail.

We will look at how to make the plain jollof rice.

Ingredients:

1000g of long grain rice
750g of blended fresh tomatoes & pepper as desired
1 satche of processed tomato paste
2 large onions
1/2 litre of vegetable oil
Seasoning cubes
Salt
Chicken
Chicken stock
Thyme
Ginger
Garlic

Pre-preparation for the jollof rice

  1. Preparing the chicken- After thoroughly washing the chicken, place it in a pan. Add your blended ginger and garlic, salt, seasoning cubes, thyme, diced onions and some pepper. It is best to leave this overnight to marinate, before deep frying.

  1. Parboiling the rice- Pour the washed rice in boiling water and allow to cook for 8mins. Pour the rice in a seive and rinse with cold water. Leave in the sieve to drain.

Preparing the stew- Dry the water in the blended tomato by cooking it on high heat, when all the water is almost dry, reduce the heat and add the processed tomato paste. Leave till all the water is dry.

Place a clean pot on the cooker, add your vegetable oil (I prefer using the oil from the fried chicken) and diced onions. Once the oil starts getting hot, add the boiled tomato paste, stir at intervals till the oil separates from the paste. Then add your seasoning.

Making the jollof rice:

Pour the stew into a pan big enough to cook the rice, add the chicken stock and some water. Allow to cook at medium heat.

Once it starts boiling,add salt, and any seasoning and spice you desire, then add the parboiled rice. Stir and ensure the liquid in the pot is at the same level as the rice. Allow to cook at medium.

Once all the water is dry and you are satisfied with the taste and texture of the rice, stir finally with a wooden spoon and allow to sit for about 5mins before serving.

Serve the jollof rice hot with the fried chicken and any side dish, if desired.
