Meatloaf Reicpe (Keto)

Hi guys,

Today's recipe is a bacon and beef mince meatloaf with an egg centre! Want to get all your protein in one go? This recipe won't fail to impress! Substitute the bread crumbs with almond flour to make a keto version!
Ingredients

3 Eggs (boiled)
1 Egg (beaten)
1 Onion
1kg Beef Mince
20 Slices Bacon
150g Bread Crumbs/100g Almond Flour
Seasoning: Salt, Black Pepper, Cayenne Pepper, Worcestershire Sauce, Mixed Herbs, Cinnamon

Recipe

Preheat the oven to 200 degrees celsius. Fry the onions till browning and set aside to cool. Boil 3 of the eggs for 10 minutes, set aside to cool.

In a bowl, mix the beef mince, seasoning, breadcrumbs/almond flour, and beaten egg together, add in the onion and mix well. Take half of the mixture and form a base with a depression in the middle on an ovenproof baking tray. Peel the three eggs and place in the dent, and use the rest of the mix to form a lid, making sure the loaf is completely sealed.

Wrap the loaf in bacon, tucking in the bacon that you place over the top underneath the loaf, so that it sits under the base. Bake the loaf in the oven for 1 hour, checking that the juices are clear by sticking a knife or long fork through the middle.
