WINE CONSUMPTION : HOW MUCH DO YOU KNOW ?

WINE

Wine is a beverage( alcoholic or non- alcoholic) gotten from the fermentation of the juice of grapes, gathered freshly.
Wines are produced from grapes, either red or white.
White grapes are used to produce white or colourless wines, red grapes are used to make red wines while a mixture of both grapes gives rose wine( or pinkish coloured wine).

Do you know that all wines get fermented but sparkling wines like Champagne go through secondary fermentation?
There is also need for wine tasting. This helps to bring out the characteristics or description of the wine tasted.
When serving food with wines, both should harmonize and compliment each other enhancing their performances.

While eating in a restaurant, you are at liberty to choose your favourite wine. However some restaurant managers have been trained and had further trained their waiters to know what wine accompanies a particular food. As such, they can advice customers on the wines to take.

TYPES OF WINE
~White wine

~Red wine

~Sparkling wine
~Aromatised wine


~Rose wine.

WINE PRODUCTION
Grapes are used to produce wine. They are harvested manually or mechanically and then taken to winery for primary fermentation. They are allowed to ferment with their grape skin which eventually gives them their colour. Red grapes for red wine, white grapes for white wine and so on. White wine can also be produced from the juice extracted from red grapes while the red skin is removed.
Yeast is added to the grape juice and after some few weeks, that yeast is converted to ethanol( or alcohol) and carbon dioxide.
Once fermented, the juice is kept in a tank and the skin is pressed. Both are blended together. The wine is kept warm while the remaining sugar is converted to alcohol and carbon dioxide.
Some wines do undergo secondary fermentation too.

WINE MISTAKES ( FAULTS IN WINE)

Faults in wine are rare, however the following few mistakes can not be over ruled.:

  • Oxidation: Bad storage can lead to much exposure to air, which affects the colour of the wine sometimes.
  • Contamination: Without doubt, disinfectants used in washing bottles, re-use of bottles, faulty bottling machines, excessive bottle age can contaminate wines. More so, diseased forks can cause bacterial action on wine.
    *Acidification: When exposed to much air, the vinegar in wine develops a film-like substance on the surface of the wine and before long, acetic acid is produced on the wine.
    *Sulphur dioxide added to preserve wines, if in excess is harmful. When wine is opened, in a few seconds, the sulphur ought to disappear, making the wine drinkable but if in excess, its not good.

THINGS TO KNOW ABOUT WINE AND FOOD
Although it is not compulsory, it depends on what the customer wants but :

  • Fish should be served with red wines

*Wines ought to be served before food. Will you wait? Hahahaha.

  • Good wines should be presented before great wines. There's a difference.

*Lighter wines should come before heavier wines.

*Serve national dish with their wines. E.g, Italian dish should go with Italian wine.

*Serve red meat e.g beef with red wines.

*Serve sweet or deserts at the end of the real meal with chilled sweet wine.

*Serve aperitifs before meals so as to stimulate apetites. Most times, make it grape based.

IN SERVING WINES
Waiters should do the following:
~ Take the wine to the table in an ice bucket

~ Show the customer the label

~Handle the wine with a clean napkin

~When cork is removed, wipe the neck of the wine and the bottle

~ Allow your host to taste the wine

~Serve the ladies first.

IN DRINKING WINE
Wine drinkers, always check the label of your wine before drinking. A good wine with a good label should contain:
*Wine name
*Country of originated.
*The alcoholic strength. Be careful if not written
*Content value.e.g the ml
*Year of grape harvest
*Name / address of producer
*Details of the bottling company and its distributors.
