Beef Stuffed Vegetable Rolls

These rolled and stuffed vegetable steaks are a nutritious and delicious gluten-free meal and that you prepare in 30 minutes is an excellent choice for those who follow a diet like Lebron James.

Ingredients:

.- 8 thin slices of beef (sirloin) or meats

.- 3 Mushrooms Button or cremini, white

.- 1 green pepper

.- 1 red bell pepper

.- 1 rosemary, freshly chopped

.-1 yellow onion, medium

.- 1 zucchini, medium

.- Salt and pepper freshly ground black

For the glaze:

.- Extra virgin olive oil 1 teaspoon

.- 1 clove of garlic, chopped

.- A quarter cup of dark balsamic vinegar

.- Red wine 2 tablespoons dry

.- 2 teaspoons of brown sugar

.- 2 sprigs of fresh rosemary

.- A quarter cup of meat broth

PREPARATION:

To save time you can cut the vegetables in advance so that you have them ready for when you go to cook.

Step 1. Rub both sides of the slices of meat with a little extra virgin olive oil. Sprinkle with salt, freshly ground black pepper, and a little chopped fresh rosemary.

Step 2. Cut the vegetables into thin strips.

Step 3. Heat one tablespoon of extra virgin olive oil in a skillet over medium-high heat and cook the vegetables until tender, season with salt and pepper. The vegetables are still going to cook a bit more when the meat rolls are roasted, so do not overcook them. The goal is to keep them slightly crispy at the end.

Step 4. Place a few of the vegetable strips vertically at one end of each slice of meat so that once the vegetables are rolled up they protrude out from each end of the meat roll.

Step 5. Roll and secure with a toothpick. Repeat the procedure for each roll of meat.

Step 6. For the balsamic glaze with rosemary, heat the olive oil in a small saucepan over medium-high heat. Add the garlic and cook for a minute, until fragrant.

Step 7. Add the balsamic vinegar, red wine, brown sugar and the rosemary sprigs and bring to a rapid boil. Lower the heat and simmer uncovered for 5 minutes. Add the broth, bring to a boil, reduce the heat to low and simmer for another 15 minutes. Discard the rosemary sprigs.

Step 8. Prepare the grill and Grill each side for about two minutes or according to the desired cooking point. Do the same if you cook them in a pan.

Step 9. Serve immediately sprinkled with the balsamic glaze. This dish is fantastic, with baked potato
