There are so many varieties of bananas in the Philippines. The most noted ones are Lakatan, Latundan, and Saba. One of the brothers in the church gave me a newly harvested Saba. We have already eaten some of it, but there are still many more left. Before the remaining Saba gets over ripened, I decided to make them a banana cupcake.
While preparing for the ingredients in making a banana cupcake, I remembered that another brother who attended a conference in Tuguegarao City, Cagayan Province gave me some of the delicacies coming from the province. He gave me the following; Carabao's Milk Candy, Coffee Beans, and peanuts.
The Carabao’s Milk Candy for me was very good and healthy. But my children do not like it, so what I did, I decided to incorporate the Carabao’s Milk Candy in the preparation of the Banana cupcake as part of cupcake’s frosting.
The ingredients of the frosting on the banana cupcake were the following; oats, cinnamon, nutmeg, butter, coco brown sugar and of course the Carabao's Milk Candy. The coco brown sugar is a healthy alternative sweetener for those who are suffering from diabetes.
When my kids tasted the banana cupcake with a twist, they liked it so much. I named the cupcake The Crumbly Banana with Oats and Carabao's Milk Candy Cupcake.
