I love to use crumbled spicy chips to coat fish and scampi before frying.
Using nachos for chicken nuggets sounds delicious too.
I have no airfryer so I would go for the classical baking technique. :)

Edit: yes, that Donkkasu looks a lot like a variant of German Schnitzel. Even the size is not too unusual.
