Have you ever eaten elderberry flowers? When they bloom, they look beautiful - magnificent elderflower heads with small, white flowers. They can be found in many places during walks, and maybe even grow in your garden? Not everyone knows that from these wild edible plants you can create delicious dishes - in Denmark elderberry lemonade is very popular, in other countries - pancakes, as well as cookies.
In the past week, during the walk, I noticed a beautiful elderberry tree, which seemed to invite me to pick white flowers from it. I picked a dozen elderflower heads.
It is important to collect only white flowers when their color becomes yellowish, or brown, they cannot be picked. After returning home, I washed them with dirt and maybe with insects.
It is important not to eat raw elderberry flowers because they are poisonous. You can eat them only after cooking or frying.
The recipe for pancakes with elderberry flowers is simple. Make a pancake dough. I usually make it from 1 cup of flour, 1 cup of milk, 2 eggs and a pinch of salt. I mix everything. Then I poured the dough into hot oil and put there elderflower heads with a twig. The twig should be cut off. Fry the pancake on two sides.
The pancakes came out delicious! The elderberry flower is very aromatic, which gave it an interesting and distinct taste.
