It sure is comforting! They're really tasty, hearty, and convenient. I haven't had homemade hashbrowns since going vegan and gluten-free. Who knew that chickpea flour replaces both egg AND flour?! It even adds protein just like eggs do. Could maybe even experiment with a tiny bit of xanthan gum if you really wanted :)
