今天中午吃寿喜锅哟

寿喜锅也叫作“锄烧”或“牛锅”,日语写作“すき焼き”(SUKIYAKI)。“锄烧”这个名字的由来,根据江户时代的《料理早指南》一书的记载,源自农民把鸡肉等一些随手可得的食物放在锄头上烤熟吃的习惯。“锄”字读作“すき”,大致和“寿喜”两字差不多的音,喜欢吉祥字眼的中国人就把这个东西音译成“寿喜锅”了。
江户时代的寿喜锅一般是用鸡肉、鸭肉或者鱼肉去做。直到1859年横浜被开放为通商口岸,大批的洋人带着他们的吃肉习惯入驻这个城市,好学的日本人突然觉得,吃牛肉也是“文明开化”的标志,于是开始模仿起吃牛肉。
当时著名的思想家福泽谕吉就竭力鼓吹吃肉,他认为日本人之所以矮小,在身高、体格上不如西洋人,归根到底就是日本人没有吃肉的习惯,耸人听闻地表示:不吃肉就体力虚弱,体力虚弱就有亡国的危险。
在明治五年(1872)1月24日,明治天皇下令试吃牛肉,并让报纸大肆报道一下天皇吃牛肉的消息,以作为“率先垂范”。于是,民间一窝蜂地开始吃起牛肉来。
