I LOVE purple potatoes!! We get them locally in our natural food stores and in our farmers markets (Santa Cruz, California). It's become one of my top favorite potluck dishes, to make purple potato salad and load it with pea pods, radishes, red onion ( for purple/red/green interest!) and then go with "Just Mayo" brand (pea protein mayo brand whose impetus was to help wean commercial manufacturers battery-farmed chickens/eggs), OR Primal Kitchen brand #MarkSisson [author of The Primal Blueprint] Avocado oil mayonaise.
