Heavenly Crepes With Cottage Cheese, Sour Cream and Delightful Berries (Exclusive Recipe And Photoshoot)

Crepes with cottage cheese filling always remind me of my childhood. My grandma was cooking crepes with cottage cheese, my mom cooked these from time to time too. There is something special and even magical in this very flavor when crepes are cooked. Really worth sharing I thought to myself. So, here is another great recipe: Heavenly Crepes With Cottage Cheese.

Ingredients

1 L milk;
~200 mL flour;
3-4 eggs;
up to 200 g butter;
1 teaspoon baking soda;
2 teaspoons vinegar or lemon juice;
2 tablesoons of olive (sunflower) oil;
300 g cottage cheese;
~100 g sugar (or vanilla sugar);
Berries or fruits;
Sour cream to taste.

Get some deep pan or a bowl and pour the milk. Gradually add flour and mix it using a blender (electric mixer or whisk). Add 2 eggs, oil, separately combine baking soda and vinegar (lemon juice) in a spoon, add to the mixture and also add some sugar (2 teaspoons). Mix it all more until you got rid of all the lumps and the mixture becomes of that homogeneous consistency pretty much similar to sour cream.

Preheat a small frying pan, pour the mixture to cover the pan (see the collage above). Cook up to two minutes until the bottom is slightly browned. With a wooden spatula gently flip the crepe and cook for 1-2 more minutes the other side. Intermix the crepes with some butter.

For the filling take cottage cheese, add 1-2 eggs and sugar. Mix it up all together (you may want to add raisins).
Spread the filling on each crepe and wrap them all up. Put them all into a buttered pan suitable for the oven, cover with foil and put into the oven (some 200C heat) for approximately 30 minutes.

Take out the crepes, put them on a dish and decorate with berries.
You also might enjoy the crepes with sour cream and honey.
