Vegetable Pakory

Vegetable Pakora or pakoda are quick deep fried snacks made with chickpea flour / baisan and some vegetables like (spinach,onion,cauliflower,eggplant,potatoes and bell peppers) .

Mostly onions are used to make pakora, but other vegetables can be used also.

Pakora, also called pakoda, pakodi, its a fried snack. It is found across the Indian subcontinent, especially in Pakistan, India, Bangladesh and Nepal.

Very best crispy Pakistani-style onion pakora recipe (Indian fritters) served with ketchup chutney. Pakoras are delicious, easy, vegan,crispy and healthy snack.Pakora Platter and Imli Ki Chutney - Pakoras are fried snack found all across Asia and are preferred most during Ramadan. These are highly popular in Pakistan .

Ingredients

2 cups Chickpea flour / Baisan
2 large size onions / Payaz
1 large potato / Aloo
5-6 Green chilies / Hari mirch
1 small piece ginger / adrak
1 tsp red chili powder / laal mirch
Salt as per your taste / namak
1/2 tsp tumeric powder / Haldi
1 bunch of spinach / palak
1 bunch of green coriander / hara dhaniya
1/2 cup of water / pani hasab zaroorat
1 tsp dry coriander / sookha dhaniya
1 tsp cumin seeds / Zeera
Pomegranate seeds / anar dana

Preparation

Rinse,peel and thinly slice all the veggies,
(onions ,potatoes and spinach,green chilies and green coriander and ginger).
Mix all the above mentioned ingredients(veggies,dry spices) and mix with water well.
Batter should be medium consistency,thick flowing.
Keep aside for 15-20 minutes.

Method

Heat the oil over medium high heat for deep frying.
When the oil is hot put spoons full of batter in the oil.

Fry all the pakoras on medium flame.
When one side of pakora is golden brown you can flip and change the side.
You need to keep frying till the pakoras are crispy and golden.
Remove the pakoras from the oil and put on a tissue paper towel and drain all the oil.

Serve the pakora with any sauce like ketch up,tamarind chutney or any other sauce.
