嗨,大家好!今天我要跟大家分享的食谱是甜酸辣三宝。甜酸辣以糖、醋和辣椒为主,而三宝是指青瓜、胡萝卜和黄梨。这道甜酸辣三宝可作为餐前开胃菜,也可以在休闲时拿出来当零食享用噢!
∼∼ 甜酸辣三宝 ∼∼
食材
青瓜 ∼ 1000克
胡萝卜 ∼ 400克
黄梨 ∼ 300克
大辣椒 ∼ 3条
小辣椒 ∼ 适量
白醋 ∼ 1杯
酸梅粉 ∼ 3汤匙
盐 ∼ 1茶匙
白糖 ∼ 一杯
做法
首先将青瓜洗净,再将青瓜头尾两端切下大概半寸,再用切下的部分跟青瓜头尾两端互相磨差,将苦汁抽出。需时大概一分钟左右。
然后就用削皮刀将大部分的青瓜皮削掉,保留少许即可,让色泽带一点绿色更漂亮些。当然,不喜欢吃皮的朋友也可以将皮削干净。
用刀子将青瓜从中间左右切开两半,再用小匙将中间种子的部分挖干净。然后,就可用刀将全部青瓜切成大概2寸长的长条状。
将胡萝卜洗净,再用削皮刀将萝卜皮削干净。把萝卜切成薄片,再将其切成大概2至3寸长的小丝条备用。
黄梨记得要买甜的会比较好吃。将黄梨皮和中间硬心的部分去除。切成小块状备用。
将大辣椒洗净,切开两半,去掉中间种子的部份,然后再切成长细丝条备用。
在一个大盆中,将青瓜条、胡萝卜丝、辣椒丝、盐和水倒入盆中搅均即可。水的份量能盖过青瓜和萝卜就够了。让其在盐水中浸泡十分钟左右,然后就可把水倒掉。
将白醋、白糖和酸梅粉倒入盆中,与青瓜胡萝卜一起搅拌均匀即可。加入少许(半杯左右)的水,不需要加入太多,因为青瓜本身已有水份,所以在腌制的过程中会出水。白醋和糖的份量可依个人喜好调味,增加或减少依个人口味而定。
腌制前,可加入少许小辣椒。小辣椒的份量可依个人喜好而定。可以吃辣的朋友不妨多加些小辣椒,加入后用汤匙压扁搅均即可。
将整盘青瓜萝卜酸腌制3小时以上,如晚上做的话,可放入冰箱腌制过夜会更入味些。
青瓜萝卜酸腌制好后,就可取出碗中,加入少许黄梨搅拌好就可以上桌慢慢享用了。
其余的甜酸辣三宝可继续放入冰箱保存,因为是腌制品,所以可以保存一星期也不会坏。
