GREEK STYLE ROASTED EGGPLANT - EASY AND HEALTHY - VEGETARIAN - TRY IT OUT!

Hello dear steemit foodies!

Today i went around the market and found beautiful eggplants so i couldn't resist picking one

It was so shiny that when i saw it in the store i could see my reflection, very tempting!

I took that pretty eggplant and started doing what it deserves , the recipe is down under the pictures , now lets see the results :

Oh baby, just look at that and imagine the scent of freshly roasted eggplant, i can assure you it will make your mouth drip.

I'm telling you guys, you really have to try this one out, unlike the usual stubborn eggplant you find, this recipe will leave your eggplant charmed and in love with your fork, you wont have to scrape it or fight with it one bit, it will be like slicing through hot butter, delicious!

The recipe:

You'll need -
A medium sized eggplant
50-100 grams of feta cheese, depending on your taste, personally the more the better!
Olive oil
Salt
Pepper
Cumin

Steps -

1.Preheat the oven to 220C

  1. Slice the the stem off the eggplant and cut it open in the middle into two even long parts, Cut X Shaped cuts into the flesh of the eggplant but be careful not to hurt the skin of the eggplant on the bottom.

  2. Drizzle a small amount of olive oil onto a baking tray, spread it evenly and lay the eggplants on the tray flesh side up.

  3. Drizzle olive oil on the eggplants, put one or two pinches of salt, not too much, we want those eggplants juicy! and next add the pepper and cumin to taste ,( i personally like around 2-3 pinches of pepper and a lot of cumin!) on the eggplants and massage it together with the oil into the cuts in the flesh.

  4. Put the eggplants in the oven and let it bake for around 15-20 minutes, all through check if the eggplants get too dry, put your fork into the eggplant and if it doesnt mush around yet, drizzle a little amount of olive oil on the eggplants to add some juiciness.

  5. Take the feta cheese and slice it roughly into small pieces.

  6. When the eggplants look brown and dry from the outside but are half mushy and half done on the inside, take the tray out , drizzle a little amount of olive oil, add the feta cheese on the eggplants and push the cheese between the cracks, put the eggplants back into the oven and change the temp to 110C

  7. Bake for 10-15 more minutes until you see that the eggplants have a dark brown color and wrinkley skin from the outside, the cheese should look slightly molten but still firm .

  8. Add a small drizzle of olive oil and a pinch of pepper.

  9. Enjoy!
