SIMPLE SPINACH AND FETA BRUSCHETTA - HEALTHY AND EASY - VEGETARIAN - TRY THIS OUT!

Hello dear steem foodies!

After going through my eggplant adventures i was left with some extra feta cheese that i had to use up, so i had to come up with a good way to do so.

I figured that that i could use some spinach and left over sourdough bread to make up some great tasting spinach and feta breschetta.

Here is what those beautiful pieces of bread looks like, amazing, the average eye will see feta cheese ontop of spinach layed on some bread, but me? i see feta cheese making love to spinach ontop of a sourdough bread, lubricated with olive oil and spiced with some pepper, i feel bad about disturbing them but i cannot help but biting into the action, yummy!

The recipe :

What you'll need -
Feta cheese
Sourdough bread
Spinach
Black Pepper
Olive oil

The steps-

  1. Slice the feta cheese into rectangle shaped slices that will fit on small to medium sized bread slices, Slice the equivalent amount of bread slices as the cheese slices you have, Warm the oven to 220C.

  2. Rub a small amount of olive oil on the bread slices and lay on a grill rack, we want a grill rack because we want the bread to toast all through.

  3. Lay the the spinach on the bread.

  4. Lay the feta cheese on the bread slices, season with a bit of black pepper and drizzle a bit of olive olive oil.

  5. Put in the oven for 10-15 minutes till the bread browns and becomes crusty, the bread should become black, but if the edges become black that's okay, just make sure none of the inner bread becomes too toasted, it should be crusty, a bit dry but still bready.

  6. Turn off the oven and let the bruschettas dry inside the oven for 5-10 more minutes , the declining heat of the oven and the dryness will help to take the moisture out of the bread and leave us only the juicyness of the olive oil together with crusty and slightly dry bread, it balances together and tastes amazing.

  7. Take it out and eat as soon as possible! You dont want to let these amazing things become cold! Also, i like to serve it with a bunch of chopped raw fresh onions soaked in lemon juice.

  8. Enjoy!
