How To Make Egusi Soup

Egusi Soup is one of Nigerians' favorite native soup. It's kinda popular main in West Africa and it's prepared using melon seeds... locally known as Egusi and it contains leafy and other vegetables. You can enjoy your egusi soup with pounded yam, fufu (pounded cassava...is that the English name sef🤔😃) or simply eat it with Eba. Actually, Egusi seeds are highly rich in fat and protein.
Here's the details on how to make your Egusi Soup...

EGUSI SOUP RECIPE

Total Time: 45 Minutes | Servings: 4 Servings

INGREDIENTS

  • 2 cups of grounded egusi melon seeds.
  • 2 tablespoons of palm oil
  • 1 teaspoon of fresh locust beans (optional)
  • 1 big onion and fresh chilies, to taste
  • Salt to taste
  • 2 teaspoons of crayfish to taste
  • 4 cups stock
  • Cooked Meat & fish of desired quantity
  • 2 cups cut pumpkin leaves
  • 1 cup waterleaf cut
  • 3 tablespoons bitter leaf washed

DIRECTION

STEP 1: First is to make the Egusi Paste...by blending egusi seeds and onion mixture together, then keep it apart.

STEP 2: Using a medium size pot, place it on a medium heat, pour the palm oil inside and allow to heat for a minute and then add the locust bean.

STEP 3: Then gently add the stock and set on low heat to simmer.

STEP 4: Scoop teaspoon size balls of the egusi paste mixture into the stock. Ensure that it maintains the ball shape.

STEP 5: Allow to simmer for 20 – 30 minutes so the balls cook properly.

STEP 6: Then, you can add your cook meat and fish and other bits like the crayfish which you’d like to use.

STEP 7: Next is to add cut-up pumpkin leaves. Also, add the waterleaf.

STEP 8: Stir and put a lid on the pot and leave to cook for 8 to 10 minutes, till the leaves is okay.

STEP 9: At this stage, you have to add the bitter leaf. But leave the lid off while the cooking... for like 5-10 minutes. Keep stirring and also check seasoning and adjust to taste.

NB: There's also another method for preparing the Egusi Soup, that's the frying method. I'll talk about it later😉🤗😅
