Snow this year is so abundant. From December 1 to December 31, we got 70cm snow dump, then it went up to 103cm by January 1st. Crazy.
Tons of snowy days, continuous cold days, then boom, we got ONE warm day. From -30C, overnight it changed to +4C. Imagine the strong wind, wowzer. But that only lasted a couple of hours. By evening it dipped to -12C, and we went back to minus 30s daily. So December was fun 😅
Anyhoo! Recipe sharing time 😍

2 tbsp sugar
1 c milk
22 g fresh yeast (1 heaping tbsp packed)
1/4 c unsalted butter
1 tbsp peanut oil
1 egg + 1 yolk
2 c strong baker's flour
A pinch of salt
3/4 c flour
1 egg
Blanched almonds
1 1/2 – 1 3/4 c unsweetened Applesauce
1 tbsp unsalted butter
1 tsp cinnamon powder
1 c raisins
1-2 tbsp cornstarch
2-3 tbsp milk
2 tbsp sugar
1 tbsp strong baker’s flour
Let's make the filling first. Pour applesauce into a pot, mix in butter, cinnamon powder, and raisins, bring to boil
Dilute cornstarch in milk, then pour mixture into pot, stir quickly, take off from heat
Stir in sugar and flour, let stand to cool to room temperature completely before using, however, chilled overnight would be best. In this case, you want to prepare the filling the day before.
Now let's make the dough.


Heat milk and sugar to lukewarm, either stovetop, but easiest is microwave. Add in/crumble in yeast, then pour mixture into breadmaker pot


Melt butter, stir in oil, pour mixture into the pot as well
Beat eggs then add it into the pot
Top with flour, followed with salt, and click dough cycle

Dump dough onto clean surface, add in flour, knead
Roll flat and spread filling, form a long log


Slice and let rest for 20 minutes
Beat egg and brush rolls, then too with almond slices
Bake rolls on preheated 350F for 25 mins
