Another windy morning here. Yesterday the wind was so strong that my husband was worrying much for our mammoth sunflowers. They are tall like perhaps 8-9-10 feet high and our garden stakes are all 3.5 feet only π So, yeah, the sunflowers have been dancing too actively, and my husband loves the sunflowers, so the noises he would make whenever he is standing by the dining room window, watching the sunflowers moving so crazily, we can imagine, right? It's like, nooooo, o' oh, stay, stay! π
Autumn in Canada is always fun. Morning, leaving to school and/or work, you'd dress up with sweater or jacket, by noon or so you'd go out in shorts and t-shirt, around 5 PM, back to pants and sweater again, and by 3 AM, you'd wake up trying to reach the room heater as your throat would feel a slight pain π aaaannnddd repeat! π
Enough chitchat for now. Here is a delish muffin recipe for you π
2 c flour
1 tbsp BP
A pinch of salt
1/2 c pure cane demerara brown sugar
2 banana
6 tbsp olive oil
1/2 c milk
2 eggs
1 cap vanilla essence
1/2 c butterscotch chips
Chia seeds, optional
Preheat oven to 400 F and grease muffin pan
In a bowl, mix flour, baking powder, salt and cane brown sugar, set a side
Using food processor, mix bananas, milk, olive oil, and vanilla essence, plus egg, until completely combined and pour mixture into dry ingredients
Mix until just combined, while folding in butterscotch chips
Divide batter and sprinkle lightly with chia seeds
Bake muffins for 18-20 minutes, cool on rack
