Mmmm I do like a bit of beef jerky once in a while - I like a good chillie hit with mine. Actually making my own is still on my list of things to do. I have friends that make it regularly and one of the ingredients they use is something called liquid smoke (really brings out a delicious Smokey flavour.
One time my friend tried dehydrating some fish (I think it was snapper or whiting) and it literally tasted like I was eating a raw piece of fish..... I wasn’t a fan.

Yes! in most recipes I've read, people use the Liquid Smoke to enhance the jerky flavor. But I decided to experiment with only the ingredients i already had, and the result came out just great! The amount of spices that i use, do away with the 'raw flesh' taste.
I do love the smoky flavor though, so i'll try using it one day.
