INTRODUCTION
It has been a few days since I have done a food post, so I thought it was time. I hadn't actually planned to do this post tonight, but I walked into the kitchen this evening and I was greeted by the following photo in my wife's cookbook.
Straight away I knew we were in for a treat for dinner. At the same time I knew you were all in for a treat with my next post. I rushed to my office, grabbed my phone and snapped this photo.
This thing of beauty is what my wife was planning to create for dinner. Yummo! It is a picture of mouthwatering magnificence! 😋
I popped back to my office for 15 minutes, because it was Sunday harvest time of my CUB Tokens Earned over at cubdefi.com. Check out my previous post, if you are not sure what CUB Tokens are. 🤔
While I sat in my office, the smells from the oven began to waft passed my nostrils and they were to awesome. I had to go and check on my wife's progress. I had a sneak peak into the oven and boom my senses were filled with delight from the smell and sight of our dinner baking nicely in the oven.
I can hear some of you telling me to get on with it and share the recipe already... alright, alirght, here it is.
MAIN INGREDIENTS
- 1/4 cup (74g) tandoori paste
- 1/2 cup (140g) natural yoghurt
- 8 chicken thigh fillets (1.4kg), trimmed
- 400g can chickpeas, drained, rinsed
- 1/2 large red onion (150g), cut into wedges
- 1 small cauliflower (1kg), cut into wedges, leaves attached
- 1 and 1/2 tbsp extra virgin olive oil
- 100g cherry truss tomatoes
- 60g kale leaves
ASSEMBLY INGREDIENTS
- 3/4 cup (210g) natural yoghurt
- 1/4 cup (75g) mango chutney
- lime wedges, to serve
METHOD AND PREPARATION
- Preheat oven to 220°C fan-forced.
- Combine tandoori paste, yoghurt and chicken.
- Place chickpeas and onion in a baking paper lined roasting tray.
- Top with chicken, cauliflower wedges drizzled with oil.
- Bake for 15 minutes.
- Add tomatoes and kale.
- Bake for another 10 minutes until vegetables start browning and chicken is cooked.
- Remove roasting tray from oven and serve.
- Add assembly ingredients to you plate as desired.
True to form, my wife did it again, she created another masterpiece. Yes, I am totally biased, but I honestly think my wife's final result looked even better than the recipe book.
I definitely know that the taste was to die for, just enough spice to keep you interested, but not too much to overwhelm the flavours from the other ingredients. The chicken was wonderfully tender and the cherry tomatoes were a flavour explosion in your mouth, literally. I am salivating as I sit here writing about it.
If you look back at the oven photo, you will notice that my wife did two batches, which means I have a delicious lunch for work tomorrow! Life is good, I am a happy man, that can now go to bed with the knowledge that I get to relive this whole experience again tomorrow. 😋
