Cooking butter chicken today! 🌻

Hello beautiful people! Today's cooking is butter chicken. This creamy flavourful dish is great with rice and flat bread chapati. It's one of my family's favorite special dish, and I want to share how I cook my spiced tomato sauce butter chicken.

Ingredients for tomato sauce for chicken

Tomatoes 3 mediums
Onion 2 big
Cumin seeds 1tbpn
Butter 50 grms.
Cashew nuts a handful
Curry leaves ( optional)
Chili 1pc.
Grated fresh turmeric, ginger & garlic paste.
Dried fenugreek leaves, 1 tbsp
Chili powder 1 tspn.
Coriander powder 1tspn.
Garan masal powder a pinch
Cream 2tbspn

Ingredients to marinate chicken breast

500 grms chicken breast ( cut into small pieces)
Yoghurt 2tbspn.
Chili powder 1/2 tspn.
Coriander powder 1/2 tspn.
Ginger garlic turmeric paste 1tspoon
Salt
Lemon

Process as shown pictures below.

Beforehànd we need to marinate chicken for atleast 1 hr. - maximum overnight.
In here we add all ingredients and coat chicken with spices.

Add in yoghurt and 1 small lemon, continue to coat chicken until well spread.
Set aside. Chill in the ref for 1 hr.

Heat oil. Shallow Fry marinated chicken,

Prepare ingredients for the tomato sauce

The toasted (brown )masala in the pan, is important as it will enhance flavour to the sauce.
In the same pan, add in cumin seed.

Add in onion, curry leaves and chili. Saute for 1 minute. Add a little bit of water to softened the toasted masala.
Cook for 1 minute.

Add in ginger, garlic & turmeric paste

Add in tomatoes. In here we need to slow cook the tomatoes, adding a little bit of water and mix.

Add in dried fenugreek leaves, crushing with your both palms.

Add in cashew nuts.

Add in chili powder & coriander powder and salt. Mix.

Slow cook tomatoes until well done. Stir occasionally.

Tomatoes are well done. Cool down and puree spiced tomatoes.

In same pan, melt in butter, then pour in tomato puree.

Add a little bit of water,mix then simmer for a few more minutes.

Add in chicken pieces to the sauce. Then stir.

Add in cream and continue to stir.

Lastly, add in a very little garam masala powder (about a pinch)

Give it a stir.

Butter chicken is ready! Serve with rice🙂
