Why Organic Blueberries?

Blueberries are packed with health benefits!
Blueberries are best eaten raw. Fortunately, blueberries can be frozen without losing any of their health benefits.
Blueberries super great health benefits, the potent antioxidant loaded, alkaline rich super fruit.
Beside that Blueberries very good for skin, hair, help fight signs of aging, provides fiber, fight against cholesterol and improves binocular vision..

We went to the garden today and we saw all those wonderful blueberries ripening under the hot summer sun.

Well.. I couldn't help myself. We recently picked more than 10 pounds of Blueberries, I washed them and made numerous recipes, froze a bunch and even shared with my son.

There are a few steps to make blueberry smoothie and Blueberry pie.
It is super easy and comes together perfectly. I I couldn't be more pleased with the end result.

Blueberry Smoothie Ingredients!!

  • 1 Cup frozen Blueberries.
  • 1 frozen banana
  • 1 Cup frozen peaches.
  • 1 tablespoon organic vanilla protein powder.
  • 1 Cup Ice Cubes.

Instructions!!

  • Put all the ingredients into a Vitamix blender and pulse until the smoothies is well blended.
  • I use Organic vanilla powder because I get a lot of protein from my smoothies.

    You may leave out the protein powder if you don't want to use it.

Now.. I will share the Ingredients my Homemade Blueberry Pie to y'all..

I like to make my own crust..
Ingredients for the crust!!

  • 1 1/4 Cups Organic unbleached all purpose flour.
  • 4 Tablespoons cold Organic unsalted butter. ( Cut into 1/2" chunks).
  • 1Teaspoon Organic sugar.
  • 3 Tablespoons ice water.

For The Blueberry Filling!

  • 2/3 Cup Organic granulated sugar.
  • 5 Cups fresh Blueberries, rinsed and dried.
  • 1/2 of a small Organic Apple, peeled and cored, then grated.

For the Crumble!

  • 5 Teaspoons unbleached organic all purpose flour.
  • 3 Tablespoons organic light brown sugar.
  • 2 Teaspoons of Honey.

INSTRUCTIONS!!

  1. To make the pie crust..
    In a bowl processor, pulse the flour and sugar to combine. Add butter and process by pulsing until the mixture resembles a coarse meal. Add 3 tablespoons ice water and pulse a few more times until it starts to come together. Do not over process. If the mixture holds together when you pinch a few pieces, then it is done.
  2. Gather all the dough together and press into a disc. Wrap in plastic wrap and refrigerate for 1 hour or longer.
  3. Remove the dough from the refrigerator and place on a lightly floured work surface. Using a rolling pin, roll into an 11 or 12 inch circle. Gently place the dough into a glass pie plate. Fold the extra dough to put on top the pie.
    Refrigerate the crust for 30 minutes or until well chilled.
  4. Preheat the oven to 375 degrees. remove the pie crust from the refrigerator and bake the crust for about 20 minutes until it starts to brown lightly.
  5. Remove the pie crust from the oven and set aside to cool while preparing the filling.
  6. To prepare the blueberry filling:
    Place the blueberries in a large bowl , add the grated apple and whisk together the sugar. Gently toss the blueberries to combine and gently turn to coat. Set aside until the berries start to release their juices ( 20 - 30 minutes ).
    7.To make the crumble.
    In the bowl of the food processor, combine the flour, brown sugar and honey. Pulse until combined.
  7. To assemble the pie, pour the blueberry mixture into the blind baked pie crust. Top with the crumble mixture spreading evenly. Cut chunks of butter on top the crumble. Put the rest of the pie dough to cover the blueberries, crumble mixture.
  8. Bake in the oven at 375 degrees for 1 hour. Once the filling bubbles and the pie is golden brown, remove and allow to cool to room temperature.
  9. Store leftovers in the refrigerator.

NOTES:

  1. The Delicious smoothie offers a blend of healthy nutrients. Blueberry smoothie is packed with antioxidants and protein... Good for Breakfast.
  2. The blueberries and Pie are made for each other.
