Great write-up! Another benefit is you can often replace other unhealthy sources of protein with eggs. If I want protein in my salad, my options are normally processed ham, processed turkey, or eggs. I'll happily avoid all the sodium in the processed meats. Now I just hope I'm in the 70% with no increase in total cholesterol.
