Because your taste buds are not adapted yet. If you eat food when you are hungry only , like really hungry, your focus will be on re-energizing your body and the taste of the food will not really matter. It really shouldn't matter. If you think like that then the taste of the food shouldn't be a big deal. Food is for nourishment only.

I totally agree with you. But how motivate ourself to eat mindfully. Generally, after fews days of healthy diet.... again on old track. Cycle goes on.
How do you motivate yourself?
I’ll tell you about me personally, when I start cutting out processed sugars and eat more natural foods, I find that I instinctively eat healthy. You need to be conscious at first and cut out the unhealthy foods , naturally you should start eating better. At first it will be a struggle though. Not giving up in the beginning is key.
