They do of course but you can't pick a ripe banana in Costa Rica and get it onto the well-stocked shelves of the largest produce sellers in the world before that banana starts to spot.

Also, market analysis has shown that customers are most likely to purchase a full cluster of bananas at a certain color (or ripeness). Sales are shown to increase if that exact color is displayed properly.

My job is to control temperatures and humidity that these bananas are exposed to so that that color banana ends up on the shelf and to make that color lasts as long as possible to maximize sales. There's a lot more that goes into it but that's the basic idea.

I hear ya. I never knew it was a thing either and I can't believe I get paid what I do to do what I do.
