Day 3 cleanse recipe

One Pot Red Curried Lentils

Ingredients

° 1 (15 oz) can lentils, drained

° 1/2 cup coconut milk

° 2-3 tbsp Thai red curry paste (to taste)

° 1 1/2 cups cooked brown rice or quinoa

° 1tbsp fresh chopped mint

Directions 
  1. In a medium sized pot or skillet, place lentils , coconut milk and curry paste together .

  2. Stir and warm iver medium heat.

  3. Serve over cooked rice or quinoa, garnished with fresh mint.
