HOW TO MAKE SUPER DELICIOUS EXQUISITE OGBONO AND OKRA SOUP

In this post I will be sharing Okra and Ogbono soup recipe. Okra and Ogbono soup is a popular soup in Nigeria and in many West African countries even though there may be slight variations to the recipe in each region. This soup is one that can be made using different types of ingredients but the key ones are obviously okra and ogbono, others include authentic palm oil, local seasonings (iru (locust beans) or okpei), assorted meat, dry fish, snail, and so on.

Interestingly, ogbono soup can be prepared alone and okra can also be prepared alone. So, it is amazing to have these two beauties combined in one pot. This soup can be prepared using either uziza leaf, ugu leaves, bitterleaf and so on.

Ingredients

  • ½ cup of blended ogbono1000266815.jpg
  • 10 pieces of Okra
  • Ugu leaves1000266816.jpg
  • 3 scotch bonnet

  • ½ tbsp of curry
  • ½ tbsp of thyme1000266817.jpg
  • ½ cup of palm oil
  • 4 seasoning cubes1000266818.jpg
  • Salt to taste

Step by Step

  • Start by washing your okra very well and blend using your blender or grate it. The choice is yours to make.1000266819.jpg
  • You can also decide to slice some of the okra while you blend or grate the rest. This is mainly for you to have some varieties in your soup.1000266826.jpg
  • Next, blend your scotch bonnet and onions together and set aside.
  • Then, in a bowl mix your blended ogbono seeds with some palm oil and set aside
  • Now, in a clean pot placed on medium heat add the pepper mix and add your meat, stockfish, cow skin, etc.1000266827.jpg
  • Add your seasoning cubes, curry, thyme, local seasoning (iru or okpei) and salt
  • Then mix all together and let it cook for about 15 - 20 minutes.
  • Then turn the ogbono and palm oil paste you had set aside into the pot and cook for about 10 minutes on very low heat.1000266828.jpg
  • Then, add your blended, grated or sliced okro into the pot and allow to cook for about two minutes before you add your ugu, uziza or bitterleaf.
  • After about 2 minutes put off the heat and your soup is ready.1000266829.jpg
  • Enjoy with any swallow of your choice.

I use them once in a while too. If I don't add them to soups directly I use them to season my fish or meat before adding to the soup.

Okra and ogbono soup, this is making me salivate. I feel so sad because I can't make soups but for making me salivate, I guess I'll visit a restaurant and serve my taste, lol.
