Good day friends. I love preparing desserts for my family, so I prepared a delicious passion fruit pie for them, taking advantage of the fact that we have a plant of this fruit at home. And we take advantage of this and make something really delicious and easy.
To prepare this recipe we need: - 2 cups of passion fruit pulp.
- 1 package of Maria cookies.
- 150 grams of butter.
- 2 cans of condensed milk.
- 8 yolks.
- 2 egg whites.
- 150 grams of sugar.
- 1/4 cup of water.
To begin we are going to remove the pulp from the passion fruit and add a little water, blend, strain and reserve for later use in the preparation of this pie.
With the help of the rolling pin we are going to crush the cookies well to make a powder that will be the base of the pie.
Once we have all the crushed biscuit, we are going to melt the butter, and integrate the butter with the biscuits to be able to form the base of the passion fruit pie.
This is how the cookie looks once we incorporate the butter well.
We place the cookies in the mold of our foot and press well to create the base of the foot, we are going to take this to the oven for approximately 15 minutes so that it cooks and is firm when placing the filling.
While the base of the foot is cooking, we are going to prepare the rest. In a container we are going to place the two cans of condensed milk.
Now we are going to add the passion fruit juice to the condensed milk.
We add the yolks. For each can of condensed milk there are 4 yolks.
With a hand mixer we are going to mix everything very well so that the juice and the yolks are perfectly integrated into the condensed milk.
We take the base of the foot out of the oven after 15 minutes and add the mixture that we just prepared.
We are going to cook the foot for approximately 40 minutes, or until we observe that it is no longer so liquid.
While the pie is cooking we are going to prepare some Italian meringue to decorate this foot. For this we need: - 2 egg whites.
- 150 grams of sugar.
- 1/4 cup of water.
- juice of 1/2 lemon.
We are going to place the two egg whites in a stainless steel container that is one of the best when it comes to preparing the meringue. We are going to beat until the whites look very white and firm. What we normally call snow point.
While we are beating the egg whites we are going to cook the syrup. In a pot add the sugar and water and bring to cook. The ideal is to have a syrup that is between 118 to 120 degrees. This will be noticeable when the bubbles in the syrup look thicker.
Once the whites are assembled we are going to add the syrup little by little and once we add all the syrup we beat until the meringue is colder. And we also add the lemon juice.
And this is the final result. A delicious passion fruit pie, we made a simple decoration with the Italian meringue and with this pie I pampered my family.
