Dessert Recipe : Crumb Monster Muffins

in Hive Food2 years ago

Crumb Monster Muffins are especially good for children's birthdays. Preheat the oven to 190° C. Place the paper cups in the cavities of a muffin tray. Mix margarine and sugar until creamy. Add the eggs a little at a time. Mix flour with baking powder and stir in alternately with milk. Chop 150 g white chocolate and mix in. Pour 1 tablespoon of the mixture into each cake tin, just below the rim. Bake on the middle shelf for 25 minutes. For the eyes of the Cookie Monster, knead the raw marzipan with icing sugar. Form 30 balls. Stick a chocolate droplet into each ball as a pupil. Knead in the coconut rasp and food colouring. This works best if you wear disposable gloves. Melt the remaining chocolate in a warm water bath. Turn out the crumb monster muffins onto a wire rack to cool. Dip the muffins upside down in the chocolate, let them drip off and turn them in the coconut shavings. Dip the bottom of the eyes into the chocolate and stick them onto the Cookie Monster. For the mouth, make a straight cut above the edge of the paper. Place the biscuits in the mouth of the Cookie Monster cupcakes.
