‎Below, I'll explain a simple recipe for "Chicken Adobo with Ketchup".

‎Typically, the classic adobo recipe consists of soy sauce and vinegar. But now, let's give it a refreshing twist by adding ketchup and substituting vinegar with calamansi.

‎Also, this recipe can be cooked at once, yet I'll show you my secret to making this dish shine by cooking it step by step.

INGREDIENTS: chicken, soy sauce, calamansi (or calamansi juice), water, ketchup, garlic, black pepper, bay leaf, salt, sugar, and cooking oil

PREPARATION:

‎• Because the chicken was so frozen, marinating it is impossible. So my quicker method is by sautéing the chicken with onions and garlic.

‎• As they cooked, I made sure to turn them, so they cooked evenly. After that, I poured the soy sauce, added the ketchup, pepper, sugar, bay leaf, water, and salt.

‎• I let the flavors meld together by bringing it to a boil, allowing it to simmer until the sauce thickens and the chicken is cooked through. After 20 minutes, I add the calamansi juice, to brighten up the flavors.

• Then I let it cook for a few minutes, allowing the calamansi to evaporate. Next, I mixed it, tasted the sauce, adjusted the seasonings, and then it was finally ready.

‎It tastes a little bit sweet because of the ketchup, balancing the soy sauce and calamansi. Also, what I appreciate here is the healthier option of calamansi instead of vinegar. It's rich in vitamin C and antioxidants, plus it brings a fresh and citrusy flavor without the sharp acidity of regular vinegar.
