Typically, the classic adobo recipe consists of soy sauce and vinegar. But now, let's give it a refreshing twist by adding ketchup and substituting vinegar with calamansi.
Also, this recipe can be cooked at once, yet I'll show you my secret to making this dish shine by cooking it step by step.

INGREDIENTS: chicken, soy sauce, calamansi (or calamansi juice), water, ketchup, garlic, black pepper, bay leaf, salt, sugar, and cooking oil
PREPARATION:
• Because the chicken was so frozen, marinating it is impossible. So my quicker method is by sautéing the chicken with onions and garlic.
• As they cooked, I made sure to turn them, so they cooked evenly. After that, I poured the soy sauce, added the ketchup, pepper, sugar, bay leaf, water, and salt.
• I let the flavors meld together by bringing it to a boil, allowing it to simmer until the sauce thickens and the chicken is cooked through. After 20 minutes, I add the calamansi juice, to brighten up the flavors.
• Then I let it cook for a few minutes, allowing the calamansi to evaporate. Next, I mixed it, tasted the sauce, adjusted the seasonings, and then it was finally ready.

It tastes a little bit sweet because of the ketchup, balancing the soy sauce and calamansi. Also, what I appreciate here is the healthier option of calamansi instead of vinegar. It's rich in vitamin C and antioxidants, plus it brings a fresh and citrusy flavor without the sharp acidity of regular vinegar.
