Good idea with the bean curd skin, it is indeed a bit similar to eggs for certain recipes. This fried rice is packed with such variety, I would love a plate of this on my breakfast table.

Thanks. It's a fairly new thing for me. I just thought it looked like egg after it was soaked so why not. There is much to explore in the food world.
